Syracuse Fish Soup is prepared from only the freshest and best catch in this popular historical Sicilian city. It’s a simple Italian Zuppa di Pesce (fish soup) flavoured with celery, garlic, parsley, bay leaf and white wine. It gains much of it’s taste from simmering the head, skin and bones of the fish beforehand to make the flavoursome base stock for this healthy soup.
Syracuse fish soup differs to fish soup in Genoa, in that the Genoese fish soup also adds anchovies and seafood such as mussels to the soup.
