Florence commented that this recipe was ‘truly pre-war’ with almonds in place of flour, making it a very rich chocolate pudding. Florence Irwin was born in Lurgan in 1883 and was educated at Methody College Belfast. She travelled across the Irish Sea to study Cookery, Laundry Work and Housewifery in Edinburgh, returning to become one of Ulster’s first traveliing domestic science teachers, travelling and teaching from 1905 – 1913. For more than four decades Florence published recipes in her weekly column in The Northern Whig newspaper.
