Rhubarb toad in the hole can be made all year round using canned rhubarb, which speeds up the time it takes to put this lovely dessert on the table. If you’re not a rhubarb fan, you can replace the rhubarb the same amount of any other soft fruit you like. Don’t be afraid of using canned fruit – scientific tests have consistently proven that canned fruit contains as much or sometimes even more vitamins than fresh, as the fruit is canned at its peak of freshness and not sitting around in supermarkets and lorries like fresh ones often do. Canned fruit also costs a fraction of the price of fresh fruit, unless you’re lucky enough to grow your own.
Delicious served warm, sprinkled with a little icing sugar, and a little low-fat ice cream or Greek yoghurt on the side.
