This nut free easy mock marzipan recipe contains no almonds, and is a good substitute for marzipan on a fruit cake. It’s made with soya flour, sugar, margarine, almond essence and water.
Rolled nice and thinly, it will sit perfectly under white Royal icing on celebration cakes.
If you are making mock marzipan due to an allergy to nuts, choose an imitation almond essence which is made from apricot kernels. Check that the manufacturer states that it is nut free.
If you are simply making mock marzipan to save money and have no nut allergy, regular almond essence will do fine.
