Mushroom Scramble recipe from a little autumn 1963 Ulster recipe leaflet entitled ‘what can I give them for tea?’
The leaflet lists no author but was produced to advertise eggs, bacon and dairy products in Northern Ireland.
- 8 eggs
- l tin condensed mushroom soup
- 4 slices toasted bread
Warm the undiluted soup in a saucepan. Whisk the eggs and add a little seasoning. Pour the eggs into the warm soup and stir over a low heat until the eggs are just creamy. Serve with triangles of buttered toast or grilled tomatoes.
NOTE: This is also delicious made with condensed chicken. celery or asparagus soup.
