Variations on this Hungarian Cabbage Soup recipe are to be found across Austria and Germany, and the secret to a good cabbage soup, or Kohlsuppe as it is known in the German language, is to use a great stock.
Hungarian Cabbage Soup
- 950 ml / 4 cups of stock
- 1 cabbage
- 110 g / 1/4 lb fried sausages or boiled smoked sausages
- 1 tablespoon of fat
- 1 tablespoon of flour
Shred the cabbage and brown in a little hot fat.
Sprinkle with a little flour, stir well and cook until the flour begins to brown.
Pour boiling stock over the cabbage, season with salt and pepper and simmer gently for 1 hour.
Before serving, add slices of either fried sausages or boiled smoked sausages.
