November’s a month when we all tend to cut back a little – on calories and pennies in anticipation of a bit of a splurge out in December.
It’s that cutting back, and being careful not to throw anything out feeling, that resulted in these eggy ham toasties for lunch today.
I had one egg sitting lost looking in my old antique hen and a dodgy looking slice of ham the boys had left over in the fridge at the weekend. So I buttered a couple of slices of bread, dipped and held the unbuttered sides of the bread in the whisked up egg, set the ham in between the eggy bits, and stuck them in the sandwich toaster. It worked a treat and tasted gorgeous dipped in some HP sauce I must admit – next time I’ll throw some cheese on top to fill it all out a bit more. A few grilled tomato slices might be an idea too…or a rasher or two of fried bacon in place of the ham. Did I hear you say mushrooms?
