Savoury Rice Cutlets by a former High Sheriff of Tyrone’s daughter, Eleanor Story.
Eleanor Story’s Dad was the High Sheriff of Tyrone in 1911. John Benjamin Story, MB, M.Ch, FRCSI, (1850-1931) was born in County Monaghan, and recorded in the 1911 Irish census as an Oculist and Assist M B Dub F R C S I (Practising).
The family owned Corick House in Clogher and lived in a large 15 roomed house in Merrion Square North, Dublin. Eleanor’s recipe for savoury rice cutlets was published in The Augher Cookbook when she was 18 or 19 years old (1913).
Savoury Rice Cutlets
By Eleanor Story, 6 Merrion Square, Dublin
Take a cup of cooked rice and mix with 28g / 1oz / 1/3 cup bread crumbs.
Add egg, some chopped parsley, grated cheese, chopped ham and seasoning to taste.
Spread on a buttered plate, leave to firm, then shape into cutlets.
Dip in whipped egg and then breadcrumbs, fry in boiling fat and serve dished in a circle.
