Home-made salad dressing recipe from the files of Bettine Simpson’s recipe collection. The recipe is handwritten with pencil and signed by or credited to a Mrs Hill. This salad cream is made with flour, egg yolks, milk, vinegar, dry mustard, melted butter, caster sugar and a pinch of salt.
On the back of the recipe in the photo, the writer advises, ‘ this is the book recipe but I put a cup of milk and two whole eggs in what I made, and about half spoon more of flour’.
Several of the recipes from Bettine’s lifetime collection are published in my third book The Original Irish Recipe Book. After it was published, I posted Bettine a copy, to thank her for sharing her recipes with me. She sent me this thank-you letter in March 2015. Sadly Bettine passed away later that same year on 8th October 2015.
