This little figgy banana nut bread can be doubled to serve 4. I just make it this size for myself, as it’s best eaten within a couple of days. It fits perfectly in an air fryer, but works equally well baked in a conventional oven. This bread is neither dry nor moist, and readily takes more fruit such as sultanas or dates if you like.
I’ve given my diet a huge overhaul recently, and try to slip superfoods into everything I can. I added 35 grams of Linwoods Milled Flaxseed, Almonds, Brazil Nuts, Walnuts and Co-q10 to this banana bread, and felt the better for it.
