When I’m feeding teenagers and I haven’t much time on my hands I often cook Chicken Tetrazzini Noodles. I bung the bacon in the oven to cook while I prepare the sauce. Ready cooked soft noodles speed things up, though you could boil spaghetti for this, if you’ve got time.
When I cook this dish for adults I sprinkle a handle of flaked almonds across the top before it goes in the oven. Today no-one wanted almonds so I had to give them a miss. (Aw, I do love almonds).
If you wish you can substitute the chopped red pepper with asparagus when it’s in season.
